This transformation from student residence to bustling eatery adds a unique layer of charm to every meal, making it a rare fusion of history and culture in Fredericton.
Rigby Hall, with its spacious interiors once filled with student life, now accommodates diners eager to explore the bold flavours of Mexico. While the building’s original character has been carefully preserved, its new purpose as a lively restaurant brings fresh energy to the space, offering a taste of tradition in an exciting, modern setting. This creative repurposing allows the historic structure to continue serving the community, now through the lens of Mexican cuisine, while still holding on to the echoes of its past.
The restaurant’s menu is a true celebration of Mexican culinary heritage, with tacos as the centerpiece. Offering options like fish, chicken, carne asada, carnitas, and vegetarian varieties, the restaurant’s taco selection appeals to a wide range of tastes. Carlos Alvarez, the general manager and head chef, saw an opportunity to bring authentic Mexican food to Fredericton when he noticed a gap in the local dining scene. Having moved to the city from Mexico and with years of experience working in kitchens across Canada, Alvarez was determined to share the vibrant flavours of his homeland with his new community. His passion for Mexican food is evident in every dish, and the restaurant’s menu reflects his commitment to providing an authentic taste of Mexico, made with care and the highest-quality ingredients.
